Sea Bass With A Shallot And Lemon Sauce

I used my own smoked tandoori masala in this dish. If you would like to make your own, you’ll find the recipe on my site (http://www.greatcurryrecipes.net/)You could also use another good quality tandoori store bought tandoor powder.
 
INGREDIENTS
  • 1 large wild sea bass or two large farmed
  • 1 tablespoon tandoori masala
  • 2 tablespoons olive oil
  • 2 shallots – finely chopped
  • 1 clove garlic
  • 3 tablespoons butter
  • The rind and juice of one lemon
  • Salt and pepper to taste.
 
Method
  1. Dry the fish skin and then sprinkle with the tandoori masala.
  2. Melt the butter in a small frying pan and then throw in the shallots and fry for a couple of minutes until soft.
  3. Add the garlic and lemon zest followed by the lemon juice and let it bubble for about 20 seconds.
  4. Keep the sauce warm while you cook the fish.
  5. Heat the olive oil in a large frying pan and fry the sea bass on both sides until the skin is crispy on the outside and the fish is cooked through.
  6. Place equal portions of fish on each plate.
  7. Bring the sauce back up to a simmer and then spoon the hot sauce over the fish fillets.
  8. Season with salt and pepper and serve. (My smoked spice salt works really well here.)
  9. Enjoy.

SALMON
(M&J Seafood to hold Salmon prices until January 2013)


Overall Salmon prices are rising due to the Christmas period. This is driven by high demand from Salmon smokers to process and freeze down smoked Salmon for the European supermarkets, and increased demand from foodservice.
Norwegian Salmon
Prices are expected to increase further over the next few weeks due to increased demand accross Europe, Russia, Germany, France, Netherlands and the UK. According to Norwegien suppliers there will be low volumes of spot Salmon available until late March 2013.


Scottish Salmon

With Amoebic Gill Infection still an issue, the Scottish Salmon farms have been harvesting more quickly than usual and are forecasting a lack of larger fish (6-8kg) as we go into December and the New Year. USA sales of Scottish Salmon remain extremely buoyant and this is driving prices up from the levels seen over the summer. Scottish lays a big part on menu descriptions

WHITEFISH
Cod and Haddock are in good supply and steady pricing as we head into Christmas. If the weather holds now we should see stability. Good supplies of Hake and fair quantities of Pollack have generated good exposure on the specials boards.
SEA BASS & BREAM
Stable availability and prices are forecast for the most part with the exception of a possible blip over the week of Christmas. Farmed Mediterranean species and Welsh farmed Sea Bass should be in good supply.

 
UK FARMED RAINBOW TROUT
We have a great supply of Rainbow Trout sourced from a farm on the Hampshire / Wiltshire border and fed by the river Avon. Whole fish are supplied either round or gutted and gilled (mainly 8oz to 16oz) and further processed as fillets – plain or butterflies, as well as canoed whole fish and smoked fillets. From Scotland we also have a great source of top quality Sea Reared Rainbows form 1kg to 4kg, making them ideal for cutting thick juicy suprêmes.
FLATFISH
Plaice are now rapidly filling with roe as we are in the spawning season (not the males). This normally lasts for a couple of months until the fish then shoot their roe and become very thin; they will then start to plump up around late February. Lemon Soles are good quality at the moment but landings have been very sporadic and traditionally prices rise as we approach Christmas. We have seen increased landings on Brill and Turbot recently.



EXOTICS
There has been a slight rise in price again this week due to very warm weather conditions (if the water gets too warm, the Tuna swims to deeper waters and therefore avades capture). Tuna prices will steadlily get back to the market price expected for this time of year and should fully stabilise by the end of the month. We do not expect any futher cyclones, as we had last month, to disrupt supply.


SCALLOPS
Available in various formats – from hand-dived Scallops in shell from divers around the coast from Brixham to Scotland, to dry-cut roe-on Scallop meat packed in 1kg or 2kg tubs. We also supply American roeless meat; these sweet juicy Scallops are shucked at sea and ideal for recipes where the roe is not required, so giving you a kilo of pure Scallop meat in each tub.


LOBSTERS
Canadian Lobsters are superb quality at the moment, full of meat and in rock-hard shells.


DAY BOAT LANDINGS
We have great day boat landings from local vessels the

Jessica Lynn and Ellie Jean from Poole who are landing some stunning species like Dover Soles, Brill, Turbot and Ray Wings. All landed direct to our Wimborne branch within an hour of them reaching the quayside in Poole.

We also have some of the best quality slush-iced tagged wild Bass you can buy, all caught by the Skin Deeper and Shaman fishing out of Weymouth. This year’s season seems to be running longer than previous years.

FRESH FISH OUTLOOK- NOVEMBER 2012


SALMON
As Christmas approaches the price of Salmon begins to rise. This is driven by high demand from Salmon smokers to process and freeze down smoked Salmon for the European supermarkets, and increased demand from foodservice.
Norwegian Salmon France and Russia continue to take significant amounts of Norwegain Salmon, which has led to the increase we are now experiencing on price and is also fuelled by the pre-Christmas demand for frozen Salmon suprêmes into the retail sector. We do not expect to see any let up on this untill late January.

 
Scottish Salmon



With sporadic outbreaks of Amoebic Gill Infection, Scottish Salmon farms have been harvesting more quickly than usual and are forecasting a lack of larger fish (6-8kg) as we go into December and the New Year. USA sales of Scottish Salmon remain extremely buoyant and this is helping drive prices up from the summer levels. Scottish provenance still plays a big part on menu descriptions.


WHITEFISH
We should see good availability of Cod and Haddock during November as Iceland and Norway are fully into their season. Prices should stay stable before starting to rise towards Christmas as it is seasonally expected due to reduced landings at this time of year.
Alaskan Pollock prices may start to rise due to availability issues.
Hake availability and pricing is expected to remain stable for the foreseeable future.
LINE-CAUGHT CORNISH FISH
We now have a regular supply from North Cornwall of day boat line caught fish species; from fantastic quality jig and line Squid, line-caught Cod as well as tagged wild Bass and Pollock. This small community of fishermen try whenever possible to "fish to order", meaning the quality is always fantastic and the fish will be no more than 24 hours old from catch to dispatch.
SEA BASS & BREAM
This is now the low season in Europe for Bass and Bream so we can expect prices to be stable and volumes to be good. Bream is going to feature much more in 2013 as chefs look for opportunities to ring the changes on their menus and also take advantage of the more competitively priced fish, either passing this on to their customers or using it to increase their kitchen GP%.

UK FARMED ARCTIC CHAR
Local to our Wimborne branch we have a supplier of fantastic quality Arctic Char. The current owners have been building the business since 1986 and at any one time have a biomass in the ponds of approx 8 tons. Fish are supplied from a plate size 300g up to fish of 1.5kg for producing suprêmes. The farm is fed by their own borehole water that is naturally pure and chiled making it ideal for rearing Char.

FLATFISH
Availability should be fairly stable on Plaice and Lemon Soles for November. We are however entering the spawning season for Plaice which will now be in roe over the coming weeks. We are also still getting daily landings from the

Jessica Lynn, a small day boat fishing out of Poole and landing us stunning quality Dover Soles, Brill and Turbots on a daily basis.
EXOTICS
Eid holiday period will be over at the end of October. Tuna prices are expected to rise over the next few weeks until more fish has been caught and is in the system. Prices are expected to stabilise by the end of the month. There are no expected availability issues on any other exotic species.

 
LOBSTER
Good harvests in Canada during November mean that there will be plentiful supply going into December. They will have also finished moulting which means a superb quality, hard-shell Lobster full of meat.

Fish & Seafood outlook. Oct 2012

As I do each month, I like to give you a little insight to the Fresh Fish market for the forth coming month, so here is the inside gosip for October 2012;

 

SALMON


Salmon suppliers are concerned about the availability of Salmon coming into the time of year when demand is at its highest. This is expected to push Salmon prices up to the unprecedented levels we saw last year.

NORWEGIAN SALMON; The relatively low price level over the last 12 months has contributed to a very strong development in demand for Salmon, especially from France and Russia. The value of Norwegian Salmon exports in August increased by 24% compared to August last year. Much of these fish were originally destined for a November/December harvest however, were harvested early during the summer to supply this demand. Consequently at the time, the market was flooded with smaller sizes which reduced prices during the summer and these stocks are now not available. This will therefore lead to significant stock issues during November and December (when demand is at its highest), without sufficient stock to meet this demand. This supply shortage has in turn driven prices up.

SCOTTISH SALMON; Trading was influenced by further downward pressure on traded fish prices during June. This was caused by increased volume on the traded fish market due to a stark rise in short-term harvesting from competing production areas. This pressure on traded fish is forecasted to continue through Q3 and Q4. Pressure also continued on feed and fish meal prices with a resultant detrimental effect on overall cost. The whole of the Scottish industry has been affected however, different companies to differing levels depending on the ages of their fish in the water. One key supplier confirmed that they accelerated their harvest during July and August. Fishing larger fish 2-3 months earlier than planned reduced harvest volumes for quarter 4.



WHITEFISH



 

We should see good availability of Cod and Haddock during October as Iceland and Norway are fully into their season. Prices should stay stable throughout October before starting to rise towards Christmas as it is seasonally expected due to reduced landings at this time of year.
Alaskan Pollock prices may start to rise due to availability issues. Hake availability and pricing is expected to remain stable for the foreseeable future.


MACKEREL







M&J Seafood have a fantastic source of local Mackerel available from Chesil Beach on the South Coast, however landings are very weather dependant. To supplement our Chesil Beach supply, we also have quality sources of Mackerel from Scotland and Spain to guarantee supply and competitive prices.



SEA BASS & BREAM
 
Availability of Bass and Bream is increasing as more fish are starting to come onto the market. This is expected to keep pricing stable and comeptitive during October and coming into the Christmas menu season.

UK TILAPIA  

Our main supply of Tilapia are 100% UK produced. This quality reared stock is fully traceable and sustainable. Availability is very strong and prices are expected to be comepetitive over the next couple of months as some farms try to sell off some of their stocks before Christmas. We have Orange and Black UK Tilapia available.



FLATFISH





Availability of South Coast flatfish is starting to reduce due to the weather. We are at the back end of the season now for Plaice and Lemon Sole and will soon start to switch much of our supply to the North Sea where availability and landings are more prevelent.

 

EXOTICS
 

The Tuna outlook remains uncertain due to recent high prices and a reduction in demand that has resulted in some processors switching to supplying other species.There are no expected availability issues on any other exotic species.

Wow.....How innovative!!

Hi,
As some of you may be aware, I have a slight addiction to the social network site ‘Twitter’. I love to follow chefs, restaurants and other food related people/accounts.
During the last week I came across an exciting company called ‘Global harvest’ (@globalharvest01).
